this cut is a rarity in supermarkets ... so don't be afraid to TRY this ... a simple 3 hour marinade ... toss on the grill and just keep rolling it till it hits 125-130, it will be medium rare even after letting it set for 10 minutes covered ... you'll thank me later

Tender, lean, easy to cook!

I trimmed a little silverskin off and cooked these beauties in just a few minutes. They were tender and delicious. Similar in texture to pork tenderloin, but of course, beef.
